2 cans of coconut milk
200g of sugar
¼ tablespoon of salt
1 teaspoon espresso powder
6 tablespoons unsweetened cocoa powder
3 egg yolks
1 teaspoon vanilla extract

Place coconut milk, sugar cocoa, espresso, salt and vanilla in a blender and blend until
Heat the mixture in a saucepan over medium heat and bring to a light simmer stirring
In a large mixing bowl whisk the egg yolks.
Stir in 1/3 of the warm chocolate milk mixture to the mixed eggs, add the rest of the
chocolate milk mixture slowly and mix until it combines.
Put the combined mixture in a saucepan and heat for 5 minutes until the mixture
Once chilled whisk the mixture to remove lumps and pour the mixture into the pre-
chilled ice cream container.
Make the ice cream as per the ice cream makers instructions.
